Barú Black Mountain - Natural Geisha (x Beta Coffee)
This release is a collaboration with Beta Coffee, the Surry Hills specialty bar by award-winning barista Chris Maybury, known for running more than fifty single origin lots on a single till. The coffee we chose for it comes from one of Panama's quieter success stories.
Baru Black Mountain sits at 1,350 to 1,500 metres in northern Panama's Chiriquí Province, on the edge of La Amistad International Park, a UNESCO World Heritage Site. Named after the region's strikingly dark volcanic soil, the farm enjoys mountain streams, century-old shade trees and about as close to perfect coffee-growing conditions as you'll find. Owner Pedro Rodríguez Escribano came to Panama from Spain to raise cattle, until his daughter's future husband, a German coffee enthusiast, convinced him the real opportunity was in the ground beneath his herd. He hasn't looked back since.
In the cup, a full 72 hours of fermentation before drying brings ripe berry character. Expect juicy strawberry and dark cherry over a bright hibiscus tartness, with florals lifting through the finish and a sweetness that hangs around long after the last sip.
