Emerson Felipe Narváez is a 33-year-old, second-generation producer from Cumbitara, Nariño, choosing specialty coffee in a region often dominated by illegal crops. He started with just 3.5 hectares and almost no resources, moved alone to the farm, and once paid 1.5 million pesos for a single kilo of Geisha seeds. Today Finca El Turpial spans 30 hectares at 2,200 metres, and his coffees have placed 1st, 2nd and 3rd in the Mi Nariño competition across different years.
He's a proper nerd about fermentation: pickers harvest the Geisha into GrainPro bags to carry the farm's own microbes to the processing plant. The ripe cherries ferment dry in those bags for 48 hours, then are pulped and fermented anaerobically in mucilage for another 48, washed with every floater removed, and dried on African beds. In the cup: cherry and white peach with a honeyed sweetness.
