His innovative approach to fermentation and processing brings out remarkable clarity and clean fruit notes that have earned international recognition, including a second-place finish in the Cup of Excellence.

This lot is meticulously processed: 48-hour anaerobic fermentation in cherry, followed by 48 hours of aerobic oxidation in mucilage before being carefully dried on raised beds for 12 days. The resulting cup tastes like jammy strawberry, tangerine, with a honey sweetness.
