Jardines Del Eden - Washed Sudan Rume

From Felipe Arcila's famous farm comes one of coffee's rarest treasures - Yellow Sudan Rume, an endangered variety grown by fewer than 10 farms worldwide.

Cultivated at 1,800m in volcanic soil, it is characterised by tall trees, elongated cherries, and distinctive dark green leaves, representing both coffee heritage and innovation - a true rarity that showcases the Arcila brothers' commitment to pushing boundaries in specialty coffee production.

This lot went through meticulous processing where perfectly ripe cherries are harvested, floated, hand-sorted, and undergo a 30-hour underwater fermentation that creates unique anaerobic conditions. After fermentation, the cherries are pulped, gently washed and dried in temperature controlled conditions to preserve delicate characteristics and complex flavours.

In the cup you will find notes of lemon myrtle, pomegranate, and caramelised pear as it cools down.
