    Putushio - Washed Typica Mejorado

    Regular price $45.00

Experience the exceptional coffee from Fincas Del Putushio, grown at 2,222 meters above sea level in Ecuador's ancient mountains. This washed Typica Mejorado variety comes from visionary growers Pepe Jijón, José Jijón and Francisco Vintimilla

Pepe Jijon built his reputation without any family ties to the industry by starting Finca Soledad in 2010. He later launched the ambitious Fincas Del Putushio project in the Andes, where he and his 19-year-old son José cultivate specialised Typica Mejorado varieties. His relentless pursuit of excellence includes frequent trips to Panama to learn from top global producers, bringing those insights back to create the exceptional coffees that have helped establish Ecuador's prominence in the specialty coffee world.

Cherries from this lot were hand-picked and fermented in water for 48 hours. Then pulped and placed in GrainPro bags, sealed tight with mucilage intact for another 48-hour fermentation. After the second fermentation coffee was slowly dried in shade for the first 7 days then spend the remaining 14 days under a mix of shade and sun.

The resulting profile is clean and gentle with notes of white peach, jasmine, and green apple.
