This amazing lot comes from a renowned producer - Nestor Lasso of El Diviso. Every coffee he creates is a unique and indulgent experience. His farming and experimental processing practices combined with a range of exotic coffee varieties are the perfect combination for excellence in every cup.
After initial selection cherries undergo a 24-hour oxidation at room temperature in open plastic drums, followed by an anaerobic fermentation phase lasting 200 hours, and finally immersion in water at temperatures between 28-35°C for 80 hours with recirculation. Microorganisms reproduced from the same variety are added during this phase, which highlights the unique anaerobic yeast fermentation process.
The resulting cup is a complex and layered experience with notes of cherry ripe, champagne, and dark chocolate.
